Lemon Chicken Rice Soup
Ingredients Needed:
8 Cups of Low-Sodium Chicken Broth, divided
1/2 Cup Freshly Squeezed Sunkist® Lemon Juice
1 Cup of Fresh Carrots, chopped
1 Cup of Onions, chopped
1/2 Cup of Fresh Celery, chopped
2 Cloves of Garlic, finely chopped
2 Cups of Water
2 Cups of Unsalted Cooked Rice, (brown, white or wild)
2 Boneless Chicken Breasts, Cooked and Cut
1/2 Teaspoon of Freshly Ground Black Pepper
In a large soup pot, combine 4 cups of the chicken broth with the freshly squeezed lemon juice and bring to a simmer over medium high heat. {I had my little assistant help with the Sunkist® Lemons
Add in the carrots, onion, celery, garlic and pepper and cook for 20 minutes, stirring occasionally.
Add in the remaining chicken broth, water, rice and chicken. Bring to boil, reduce heat and simmer for 30 minutes, or until the chicken and rice are well heated. {I boiled my chicken breasts ahead of time, however, baked or rotisserie chicken can be used as well - my rice was prepared in a rice cooker}
You can definitely taste the hint of lemon, however, honestly I did not miss the salt at all. Sunkist does state as you reduce your sodium intake, your taste buds will automatically adjust over time, allowing you to enjoy the true flavors of food that salt often masks. Just from tasting the soap I truly believe that!
