I miss living in the country...A LOT. I wish I wouldn't have taken it for granted so much while growing up. As a kid, I wanted to live in the city - in an apartment (what the crap was I thinking?!). I loved staying with my Grandma Joyce & Grandpa John in Grand Rapids; I loved hearing the trains at night as I slept on the living room couch. I loved the hustle and bustle of things and thought where we lived was "so boring". The city was just so different from what I was used to. I lived in the country for almost 20 years and now I miss it terribly. Don't get me wrong, I definitely love the convenience of living in a city. We can walk to the store or to McDonalds. We can walk to work/church. And if we are really ambitious, there are lots of other places we can walk to. But I miss the "freshness" of the country.
I came across this article tonight and it made me long for the days of living in the country. Canning was a part of our lives and I wish I would have paid attention because I have no idea how to do it! I remember canning salsa every summer and pickles and dilly beans. And grandma Maggie would always can jam...mmmmmm, jam. I feel like a city-slicker who has no skills!
So I am determined to do some canning this summer! If you have any great recipes or tips, please leave me a comment - I could use all the help I can get! :)
