I love cooking. But I don't love cooking every single night of the week. So yesterday, I made 4 lasagnas and put 3 in the freezer and ate one tonight. Food score! I got some disposable loaf pans with lids from Fry's and used this recipe...

1lb. hamburg
2 jars of spaghetti sauce
2 pkgs of cream cheese
1 pkg ricotta cheese
1 pkg shredded mozzarella cheese
1 pkg lasagna noodles
1 onion
2 eggs
4 crackers
Seasonings

Mix 2 eggs with raw hamburg in a bowl. Mix mixture with smashed crackers and add seasonings.

Brown hamburg mix and onion. Move hamburg mix to a large saucepan and add spaghetti and bring to a boil.

Layers:
Sauce, noodles, ricotta cheese, sauce, cream cheese & mozzarella (repeat if you have room)

Bake covered with foil for 50 minutes @ 35o degrees. Uncover and cook for another 20 minutes.

The loaf pans I use are perfect for 2-4 people. They are just the right size to fit everything in nicely. Now we will have 3 more home cooked meals without all the chaos of a messy kitchen. I plan on doing this a few times a month with other dishes so are lives will get a little simpler :)
